Quick Pasta - Basil Tomato Red Sauce - No Garlic - No Onion - Jain

I had been working on many things for a while so dint get much time to blog. But since blogging is an addiction, today when I got time I clicked and prepared a quick recipe and am sharing with you.

This is a quick pasta recipe which is prepared without using onion and garlic. Here are the ingredients-

Ingredients
Serves - 2

1 cup (unboiled) pasta (I used bambino's macaroni)
3 tea spoon basil
4 big tomatoes
1/4 teaspoon red chilli powder
1/4 tea spoon kali mirch powder
salt to taste
1+1 teaspoon oil
Water


Recipe

  • To prepare pasta -


    1. Put 4 cups of water for boiling in a big pot.
    2. When it boils, add 1 teaspoon oil and 1 teaspoon salt to the water. Then add macaroni and stir well. Take care that it doesn't stick to bottom especially while adding it to the boiling water.
    3. Let it boil for about 7-8 min on high flame or till the macaroni softens.
    4. Empty the pot in a big strainer and shake out the excess water. If you are planning to use it after a while you can toss the macaroni in a bout 1/2 teaspoon of oil.
  • To prepare Sauce -
    1. While your macaroni is boiling, you can prepare the sauce side by side. Roughly chop tomatoes and blend in a blender to make puree.
    2. In a non-stick pan (I used Wonder Chef's Diamond Pan), put 1 teaspoon of oil. If you are not using a non-stick pan, you will have to add  more oil.
    3. When oil heats up, add the tomato puree to the oil. Stir well and cook for about 2 min.
    4. Add 1/4 cup of water, basil, salt, red - chilli powder and kali mirch powder and stir well. Cook for 2 more min.
    5. Add the boiled macaroni and stir well so that the sauce coats the macaroni well. Cook it for 1 more min so that the macaroni mixes well and takes the flavors.
    6. Turn off the gas and pour the macaroni in a bowl. Garnish with cherry tomatoes, basil leaves, mozzarella cubes and serve hot.

This recipe is a perfect solution for a side dish / salad macaroni when served cold. Do try it and give me your feedback in the comments below.
